Every autumn, food lovers from all over the world travel to Piedmont for one of the rarest ingredients on earth: the white truffle of Alba. Intensely aromatic, impossible to cultivate and found only by trained dogs in the woods, it turns a simple plate of pasta into an unforgettable experience. Here is how to plan your trip around it.
When is white truffle season?
The white truffle season in Piedmont usually runs from late September to the end of January. The best quality and the most intense aromas are generally found in October and November, when the weather has been right: rain at the end of summer, followed by cool nights.
Because truffles grow wild, every season is different. A dry year means fewer truffles and higher prices, while a wet late summer can bring an excellent harvest. This is part of the magic, and part of why we follow the season closely for our clients.
The Alba International White Truffle Fair
The heart of the season is the International White Truffle Fair in Alba, held every weekend from early October to early December. The truffle market lets you see, smell and buy truffles under the guidance of experts, and the town fills with tastings, cooking demonstrations and events.
Weekends during the fair are the busiest time of the year in the Langhe, so hotels and the best restaurants should be booked well in advance.
Join a truffle hunt
The most memorable way to experience the season is to join a truffle hunter, known locally as a trifolau, and his dog in the woods. Truffle hunting is a family tradition passed down through generations, and the hunters’ stories are as fascinating as the search itself.
We arrange private truffle hunts with experienced hunters, followed by a tasting or lunch featuring freshly found truffles. It is a wonderful experience for couples and families alike.
What to eat
- Tajarin: thin, golden egg pasta with butter and shaved white truffle, the classic.
- Fried or baked eggs: a simple dish that lets the truffle’s aroma shine.
- Carne cruda: Piedmont’s hand-cut raw beef, topped with truffle.
- Fonduta: a rich cheese fondue made with Fontina, perfect with truffle.
- Risotto: creamy and simple, finished with truffle at the table.
Which wines to pair
The Langhe is also home to some of Italy’s greatest wines. Barolo and Barbaresco, both made from the Nebbiolo grape, are classic partners for truffle dishes, while Barbera and Dolcetto are excellent with everyday meals. Autumn is also harvest season, when the vineyards turn gold and red.
Tips for your trip
- Book early: October and November are the busiest months in the Langhe.
- Stay at least three nights: enough time for a truffle hunt, the Alba fair, two or three wineries and a few memorable dinners.
- Use a private driver: wine tastings are part of the experience, and the hill roads are narrow and winding.
- Buy from reputable sellers: the market at the Alba fair is the safest place to buy truffles.
